How to make delicious pancakes

Hello Lovelies….how are you? Did you miss me? Ok! I missed you too. Thank God it is another weekend, the best day to make for you and your family another healthy and delicious meal. Yes, weekends are the best days to put more efforts into preparing breakfasts because you are in no hurry to leave the house like week days.
Today, I will be teaching you how to make pancakes. Everyone loves pancakes especially children. Getting a good head start on your day means eating a healthy breakfast, but with various choices, getting the best choice can be trouble at times. Pancakes are hearty options for breakfasts, it is one of the balanced meals one can have as breakfast providing a high quantity of carbohydrates, proteins and a range of vitamins, minerals and fats and oil.
The ingredients to make pancakes are not expensive and the recipe is simple to try. So, you do not have an excuse for not making this recipe this weekend.
Most Nigerians see pancake as just a snack. Yes, pancakes can go well as a snack with a chilled drink but it goes way more than that. As a rich meal, pancakes can be eaten with Oat, Custard or Pap.
Here are the ingredients:
1 cup/ 150g of plain flour
2 eggs
½ cup/ 125mls of evaporated milk of your choice
2 tablespoons of margarine
1 cup/ 250mls of water
A pinch of salt to taste
6 tablespoons of sugar (or to taste)
Fresh or ground chilli pepper (I prefer fresh pepper)
Vegetable oil
Onion (optional)
Nutmeg for flavor (optional)
Preparation Directions:
Step 1: Put the margarine in a small in a microwave. If you don’t have a microwave, you can place the margarine in a bigger bowl of hot water to melt it.
Step 2: Break the two eggs into the melted margarine and beat till it becomes smooth. Then, add the half cup of water.
Step 3: Add the flour and mix well till there are minimal lumps.
Step 4: Add the milk, sugar, salt, fresh or ground pepper, onion, nutmeg and the remaining half cup of water, stir well.
NOTE: Ensure to blend the onion. If not, the pieces of onion when manually cut, would not let you achieve very thin pancakes.
Step 5: After adding all the ingredients, blend the mix using a blender. It will give the pancake batter the smoothness consistency. If you don’t want to blend it, no problem, just mix the ingredients very well so that the lumps are minimal.
Cooking Directions:
Step 1: Set a frying pan over medium heat. Add a few drops of vegetable oil, enough to lubricate the frying pan.
Step 2: When the pan is hot, using a cooking spoon, pour some pancake batter into the frying pan. Tilt the pan so that the batter coats the surface o the pan evenly.
Step 3: Let the underside of the pancake to fry for approximately 1 minute, shaking the pan from time to time till the pancake comes loose. You can also use a spatula to loosen it. Check the underside to see if the pancake has browned to your liking. I prefer my pancakes to be like brown.
Step 4: Flip the pancake so you can fry the top side as well.
Step 5: Your pancake is ready when both sides are light brown in colour.
There you have it! Your pancake is ready to eat. For breakfast, as I said earlier, serve with custard, pap or oat meal, but for snack, make sure you have a cold drink to enjoy it with.
